Air Fried Teriyaki Salmon Bites Rice Bowl

Ingredients

  • 1 lb salmon fillet, skin removed and cut into 1-inch cubes
  • 1/2 cup teriyaki sauce, divided
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 2 cups cooked jasmine rice
  • 1/2 cup cucumber , sliced
  • 1/2 medium avocado , sliced
  • 1 teaspoon toasted sesame seeds
  • 1 green onion , thinly sliced

Instructions

  • In a medium bowl, combine salmon cubes, 1/4 cup teriyaki sauce, olive oil, garlic powder, and ground ginger. Toss to coat evenly.
  • Preheat the air fryer to 400°F (200°C) for 3 minutes.
  • Arrange salmon cubes in a single layer in the air fryer basket, ensuring they do not overlap.
  • Air fry for 8 to 10 minutes, shaking the basket halfway through the cooking time, until the salmon is opaque and slightly charred.
  • Distribute cooked jasmine rice into two serving bowls.
  • Top rice with air-fried salmon bites, cucumber slices, and avocado.
  • Drizzle the remaining 1/4 cup of teriyaki sauce over the bowls.
  • Garnish with toasted sesame seeds and sliced green onions.
