Peel the green bananas and slice into 1/8-inch thick rounds using a mandoline or sharp knife.
Toss the slices in a bowl with melted coconut oil, turmeric, and sea salt until evenly coated.
Preheat the air fryer to 350°F (175°C).
Arrange slices in a single layer in the air fryer basket, working in batches if necessary.
Air fry at 350°F for 10 minutes, shaking the basket halfway through the duration.
Lower the temperature to 300°F (150°C) and air fry for an additional 5 to 10 minutes until the chips are golden and stiff.
Remove from the air fryer and transfer to a wire rack to cool completely, allowing them to fully crisp up.
