Ingredients

  • 1 medium butternut squash (approx. 2 lbs), peeled, seeded, and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme

Instructions

  • Preheat the air fryer to 400°F (200°C).
  • In a large mixing bowl, combine the butternut squash cubes, olive oil, salt, pepper, garlic powder, and dried thyme.
  • Toss the ingredients until the squash cubes are evenly coated with oil and seasonings.
  • Place the squash in the air fryer basket in a single layer, working in batches if necessary to avoid overcrowding.
  • Cook for 20 minutes, shaking the basket halfway through the cooking time, until the squash is fork-tender and the edges are browned.
  • Remove from the air fryer and serve immediately.
