Ingredients

  • 2 lbs boneless skinless chicken breasts, cut into 1-inch cubes
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic , minced
  • 1 teaspoon garlic powder
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon cracked black pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  • Pat the chicken cubes dry with paper towels to ensure proper browning.
  • In a large bowl, whisk together the olive oil, minced garlic, garlic powder, lemon zest, lemon juice, oregano, paprika, salt, and pepper.
  • Toss the chicken cubes in the marinade until evenly coated and let sit for 5 minutes.
  • Preheat the air fryer to 400°F (200°C).
  • Place the chicken pieces in the air fryer basket in a single layer, ensuring they are not overcrowded; cook in batches if necessary.
  • Air fry at 400°F for 8 to 10 minutes, shaking the basket halfway through to ensure even cooking.
  • Confirm the internal temperature of the chicken has reached 165°F (74°C) using a digital meat thermometer.
  • Transfer the chicken to a serving plate and garnish with fresh parsley and optional lemon wedges.
