Ingredients

  • 2 lbs chicken wings, split into flats and drumettes
  • 1 tablespoon baking powder
  • 2 tablespoons Cajun seasoning, divided
  • 1/2 cup light brown sugar, packed
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1 tablespoon hot sauce

Instructions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with a wire rack.
  • Pat the chicken wings completely dry using paper towels to ensure maximum crispiness.
  • In a large mixing bowl, toss the wings with baking powder, salt, and 1 tablespoon of the Cajun seasoning until evenly coated.
  • Place the wings on the wire rack in a single layer, leaving space between each piece.
  • Bake for 30 to 35 minutes, flipping the wings halfway through, until the skin is golden and crispy.
  • In a small bowl, whisk together the melted butter, brown sugar, garlic powder, hot sauce, and the remaining 1 tablespoon of Cajun seasoning.
  • Transfer the baked wings into a clean bowl, pour the brown sugar glaze over them, and toss until thoroughly coated.
  • Return the coated wings to the wire rack and bake for an additional 5 minutes until the glaze is bubbling and caramelized.
  • Remove from the oven and allow to rest for 2 minutes before serving.
