Ingredients

  • 14 oz smoked sausage, sliced into 1/2-inch rounds
  • 1.5 lbs yellow gold potatoes, cubed into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 packet (1 oz) dry ranch seasoning mix
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1.5 cups shredded sharp cheddar cheese
  • 1 tablespoon fresh parsley, chopped

Instructions

  • Preheat the oven to 400°F (200°C) and grease a large rimmed sheet pan with non-stick spray or parchment paper.
  • In a large mixing bowl, combine the cubed potatoes and sliced sausage.
  • Drizzle olive oil over the potatoes and sausage, then sprinkle with the ranch seasoning, garlic powder, onion powder, and black pepper.
  • Toss the ingredients thoroughly until the potatoes are evenly coated in oil and spices.
  • Spread the mixture in a single layer across the prepared sheet pan.
  • Bake for 35 to 40 minutes, or until the potatoes are fork-tender and golden brown, flipping halfway through.
  • Remove the pan from the oven and sprinkle the shredded cheddar cheese evenly over the potato and sausage mixture.
  • Return the pan to the oven for 3 to 5 minutes until the cheese is fully melted and bubbling.
  • Garnish with fresh parsley and serve immediately.
