Ingredients

  • 0.5 cup extra virgin olive oil
  • 0.25 cup fresh lemon juice
  • 3 cloves garlic , minced
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon hone y

Instructions

  • In a medium glass bowl, whisk together the olive oil and lemon juice until partially emulsified.
  • Incorporate the minced garlic, dried oregano, kosher salt, black pepper, and honey.
  • Whisk vigorously until the honey is fully dissolved and the marinade is homogeneous.
  • Place up to 1.5 pounds of chicken in a non-reactive container or resealable plastic bag.
  • Pour the marinade over the chicken, ensuring all surfaces are thoroughly coated.
  • Seal the container and refrigerate for a minimum of 30 minutes, not exceeding 24 hours to prevent structural degradation of the meat proteins.
