Ingredients

  • 1.5 cups sweet corn kernels, cooked and cooled
  • 1 large ripe mango, peeled and diced
  • 1 large avocado , pitted and diced
  • 0.5 cup red onion, finely diced
  • 0.25 cup fresh cilantro, chopped
  • 1 medium jalapeno , seeded and minced
  • 2 tablespoons lime juice, freshly squeezed
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon black pepper

Instructions

  • In a large mixing bowl, combine the corn kernels, diced mango, and diced red onion.
  • Add the minced jalapeno and chopped cilantro to the bowl.
  • Drizzle the fresh lime juice over the mixture and season with salt and black pepper.
  • Gently fold in the diced avocado to avoid mashing the fruit.
  • Toss all ingredients lightly until evenly coated.
  • Serve immediately or refrigerate for up to 2 hours to allow flavors to meld.
