  • 10 ounces frozen chopped spinach, thawed and squeezed thoroughly dry
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon ground nutmeg

Instructions

  • Preheat the oven to 350°F (175°C) and generously grease a 9-inch pie plate or ceramic baking dish.
  • In a large mixing bowl, whisk the eggs until the yolks and whites are fully incorporated.
  • Stir in the cottage cheese, shredded cheddar, and grated Parmesan until combined.
  • Incorporate the dried spinach into the egg mixture, ensuring clumps are broken up and the vegetable is evenly distributed.
  • Season the mixture with salt, black pepper, garlic powder, and nutmeg; stir once more to combine.
  • Pour the batter into the prepared baking dish, smoothing the top with a spatula.
  • Bake in the center of the oven for 35 to 40 minutes, or until the center is firm to the touch and the top is lightly golden.
  • Remove from the oven and allow the quiche to rest for 10 minutes before slicing to ensure it holds its shape.
