Cottage Cheese Chocolate Mousse

Ingredients

  • 2 cups low -fat cottage cheese
  • 1/4 cup unsweetened cocoa powder
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon sea salt
  • 1 tablespoon dark chocolate shavings for garnish

Instructions

  • Place the cottage cheese, cocoa powder, maple syrup, vanilla extract, and sea salt into a high-speed blender or food processor.
  • Process the mixture on high speed for 60 to 90 seconds until the texture is completely smooth and no curds are visible.
  • Stop and scrape down the sides of the container with a rubber spatula to ensure all cocoa powder is fully incorporated.
  • Transfer the blended mixture into two individual glass ramekins or serving bowls.
  • Refrigerate the mousse for at least 30 minutes to allow the structure to set and the flavors to meld.
  • Garnish with dark chocolate shavings immediately before serving.
