Cottage Cheese Egg and Sriracha Protein Toast

Ingredients

  • 1 slice whole grain or high-protein bread
  • 1/2 cup low -fat cottage cheese
  • 1 large eg g
  • 1 teaspoon sriracha sauce
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon freshly cracked black pepper
  • 1 teaspoon fresh chives, minced

Instructions

  • Bring a small pot of water to a boil and cook the egg for 7 minutes for a jammy yolk.
  • Immediately transfer the egg to an ice bath for 2 minutes then peel and slice.
  • Toast the bread slice until golden brown and firm.
  • Spread the cottage cheese evenly across the surface of the toast.
  • Place the sliced egg on top of the cottage cheese.
  • Season with salt and pepper.
  • Drizzle with sriracha and garnish with minced chives.
