Cottage Cheese Pancakes

Ingredients

  • 1 cup small -curd cottage cheese
  • 3 large egg s
  • 1/2 cup all -purpose flour
  • 1 tablespoon hone y
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sal t
  • 1 tablespoon unsalted butter

Instructions

  • In a medium mixing bowl, whisk the eggs, cottage cheese, honey, and vanilla extract until the mixture is uniform.
  • Add the flour, baking powder, and salt to the wet ingredients and stir until just combined.
  • Heat a non-stick skillet over medium-low heat and add a small amount of butter to coat the surface.
  • Portion the batter into the skillet using a 1/4 cup measuring tool for each pancake.
  • Cook for 3 to 4 minutes until the edges are set and bubbles appear on the surface.
  • Flip the pancakes carefully and cook for another 2 to 3 minutes until golden brown and cooked through.
  • Remove from heat and serve immediately.
