Cottage Cheese Protein Brownies

Ingredients

  • 1 cup low -fat cottage cheese
  • 2 large egg s
  • 1/2 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup oat flour
  • 1/4 cup chocolate whey protein powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sal t
  • 1/3 cup dark chocolate chips

Instructions

  • Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  • Combine cottage cheese, eggs, maple syrup, and vanilla extract in a high-speed blender; process until completely smooth and aerated.
  • In a separate mixing bowl, sift together cocoa powder, oat flour, protein powder, baking powder, and salt.
  • Incorporate the liquid blender mixture into the dry ingredients using a silicone spatula until no dry streaks remain.
  • Fold in 2 tablespoons of chocolate chips into the batter.
  • Transfer the batter into the prepared baking pan and spread evenly.
  • Top with the remaining chocolate chips.
  • Bake for 28 to 32 minutes or until the edges are firm and a toothpick inserted into the center comes out with a few moist crumbs.
  • Remove from oven and allow to cool completely in the pan for at least 30 minutes to permit the protein structure to set before slicing.
