Cottage Cheese Sweet Heat Firecracker Chicken Bake

Ingredients

  • 1.5 lbs boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 cup low -fat cottage cheese
  • 1/4 cup buffalo hot sauce
  • 2 tablespoons hone y
  • 1 tablespoon srirach a
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon cornstarc h
  • 1/2 cup shredded low-fat mozzarella cheese
  • 1/4 cup sliced green onions

Instructions

  • Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).
  • In a blender or food processor, combine cottage cheese, buffalo sauce, honey, and sriracha. Process until completely smooth.
  • In a large mixing bowl, toss the cubed chicken with garlic powder, onion powder, smoked paprika, and cornstarch until evenly coated.
  • Pour the blended cottage cheese sauce over the chicken and stir to combine.
  • Transfer the mixture to a 9x9 inch baking dish, spreading it in an even layer.
  • Bake for 20 to 25 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  • Top with shredded mozzarella and place under the broiler for 2 to 3 minutes until the cheese is melted and bubbly.
  • Garnish with sliced green onions before serving.
