Cowboy Casserole

Ingredients

  • 1 lb ground beef
  • 1/2 yellow onion , diced
  • 2 cloves garlic , minced
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/4 cup whole milk
  • 1 can (15 oz) sweet corn, drained
  • 2 cups shredded cheddar cheese, divided
  • 1 lb frozen tater tots
  • 1 tsp sal t
  • 1/2 tsp black pepper

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large skillet over medium-high heat, brown the ground beef with diced onion until the meat is cooked through and onions are translucent.
  • Add minced garlic, salt, and pepper to the skillet and cook for an additional 1 minute.
  • Drain excess grease from the skillet.
  • In a large mixing bowl, combine the beef mixture, condensed soup, milk, drained corn, and 1 cup of the shredded cheddar cheese.
  • Spread the mixture evenly into a 9x13 inch baking dish.
  • Arrange the frozen tater tots in a single layer over the top of the beef mixture.
  • Bake for 35 to 40 minutes until the tater tots are golden brown and crispy.
  • Sprinkle the remaining 1 cup of cheddar cheese over the top and bake for an additional 5 minutes until the cheese is melted and bubbly.
  • Remove from oven and let stand for 5 minutes before serving.
