Ingredients

  • 16 ounces low -fat cottage cheese
  • 1/2 cup pumpkin puree
  • 1/4 cup unsweetened cocoa powder
  • 3 tablespoons maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon pure vanilla extract
  • 1 pinch sea salt

Instructions

  • Place the cottage cheese into a high-speed blender or food processor.
  • Blend on high for approximately 60 seconds until the mixture is completely smooth and no curds remain.
  • Add the pumpkin puree, cocoa powder, maple syrup, pumpkin pie spice, vanilla extract, and sea salt.
  • Pulse or blend on low speed until the ingredients are fully incorporated and the color is uniform.
  • Transfer the mixture to a bowl and refrigerate for at least 30 minutes to allow the flavors to meld and the texture to firm up.
  • Serve chilled with sliced apples, graham crackers, or pretzels.
