Ingredients

  • 2 cups cottage cheese
  • 1/2 cup grated parmesan cheese
  • 1/4 cup whole milk
  • 2 cloves garlic , minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  • Place the cottage cheese, parmesan cheese, milk, oregano, salt, and black pepper into a high-speed blender.
  • Process the mixture on high until the texture is completely smooth and no curds remain.
  • Heat olive oil in a large skillet over medium-low heat and sauté the minced garlic for approximately 1 minute until fragrant.
  • Reduce heat to low and pour the blended cheese mixture into the skillet.
  • Whisk or stir the sauce continuously for 2-3 minutes until heated through, ensuring the sauce does not reach a boil to prevent curdling.
  • Immediately toss with hot cooked pasta, adding a splash of pasta water if a thinner consistency is desired.
