Ingredients

  • 500 g large carrots, peeled and trimmed
  • 15 ml extra virgin olive oil
  • 8 g cornstarc h
  • 2 g garlic powder
  • 2 g smoked paprika
  • 3 g kosher salt
  • 1 g cracked black pepper

Instructions

  • Slice peeled carrots into uniform matchsticks approximately 1cm thick and 8cm long.
  • Pat the carrot sticks with paper towels to remove all surface moisture, which prevents steaming.
  • In a large mixing bowl, toss the carrots with olive oil until surfaces are completely and evenly coated.
  • In a separate small bowl, whisk together the cornstarch, garlic powder, smoked paprika, salt, and pepper.
  • Dust the dry seasoning mixture over the carrots and toss vigorously until a fine, even coating adheres to every piece.
  • Preheat the air fryer to 200°C (400°F) for 3 minutes.
  • Place the seasoned carrots in the air fryer basket in a single layer, ensuring adequate space between pieces for airflow.
  • Cook for 12 to 15 minutes, removing the basket to shake and redistribute the fries every 5 minutes.
  • Monitor for golden-brown edges and a firm, crispy exterior.
  • Transfer to a cooling rack for 60 seconds before serving to allow the crust to set.
