Flourless Banana Oat Waffles

Ingredients

  • 1.5 cups old -fashioned rolled oats
  • 2 large ripe bananas
  • 2 large egg s
  • 0.5 cup unsweetened almond milk
  • 1.5 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon kosher salt

Instructions

  • Preheat waffle iron to the medium-high setting according to manufacturer specifications.
  • Place rolled oats into a high-speed blender and process until a fine flour consistency is reached.
  • Add bananas, eggs, almond milk, baking powder, vanilla extract, cinnamon, and salt to the oat flour in the blender.
  • Pulse and blend on medium speed until the batter is completely smooth and homogeneous.
  • Lightly coat the waffle iron plates with non-stick cooking spray or vegetable oil.
  • Pour approximately 0.5 to 0.75 cups of batter onto the center of the preheated waffle iron.
  • Close the lid and cook for 4 to 6 minutes until the waffle is golden brown and the exterior is firm.
  • Remove the waffle using heat-resistant tongs and repeat the process with the remaining batter.
