Ingredients

  • 1 can (15 oz) black beans, rinsed and thoroughly drained
  • 2 large egg s
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup granulated erythritol or stevia-based sweetener
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup mini semi-sweet chocolate chips

Instructions

  • Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper or coat with non-stick cooking spray.
  • Combine the rinsed black beans, eggs, cocoa powder, sweetener, applesauce, vanilla extract, baking powder, and baking soda in a food processor or high-speed blender.
  • Process the mixture on high until the batter is completely smooth and no bean skins or fragments remain.
  • Manually fold in the mini chocolate chips using a spatula.
  • Transfer the batter to the prepared baking pan and smooth the top with a spatula.
  • Bake for 20 to 25 minutes, or until the edges begin to pull away from the pan and a toothpick inserted into the center comes out clean.
  • Remove from the oven and allow to cool completely in the pan at room temperature; the structure requires cooling to set properly before slicing.
