Frozen Yogurt Granola Bars

Ingredients

  • 2 cups Greek yogurt, plain or vanilla
  • 1/4 cup hone y
  • 1 teaspoon vanilla extract
  • 1.5 cups toasted granola
  • 1/2 cup blueberries , sliced
  • 1/4 cup dark chocolate chips

Instructions

  • Line a 9x9 inch square baking pan with parchment paper, leaving an overhang on two sides.
  • In a medium mixing bowl, whisk together the Greek yogurt, honey, and vanilla extract until smooth.
  • Distribute 1 cup of granola across the bottom of the prepared pan in an even layer.
  • Pour the yogurt mixture over the granola layer and spread to the edges using an offset spatula.
  • Sprinkle the remaining 0.5 cup of granola, blueberries, and chocolate chips over the top.
  • Place the pan in the freezer and chill for a minimum of 4 hours or until completely firm.
  • Lift the parchment paper to remove the block from the pan and slice into 12 rectangular bars using a sharp knife.
