Garlic Parmesan Chicken Skewers

Ingredients

  • 1.5 lbs boneless skinless chicken breasts, cut into 1-inch cubes
  • 4 cloves garlic , minced
  • 0.5 cup grated parmesan cheese
  • 0.25 cup extra virgin olive oil
  • 1 teaspoon dried oregano
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 1 tablespoon fresh Italian parsley, finely chopped
  • 12 wooden skewers , soaked in water for 30 minutes

Instructions

  • In a medium mixing bowl, whisk together the olive oil, minced garlic, dried oregano, salt, and black pepper until emulsified.
  • Add the chicken cubes to the bowl and toss thoroughly to ensure even coating; let marinate for 10 minutes.
  • Thread 5 to 6 chicken cubes onto each pre-soaked wooden skewer, ensuring pieces are touching but not compressed.
  • Preheat a grill or oven-safe grill pan to medium-high heat (approximately 400 degrees Fahrenheit).
  • Place skewers on the heat source and cook for 6 to 7 minutes per side, or until the internal temperature reaches 165 degrees Fahrenheit.
  • Remove the skewers from the heat and immediately dredge or sprinkle with grated parmesan cheese while the protein is hot to allow for slight melting and adhesion.
  • Garnish with chopped parsley and serve immediately.
