Ingredients

  • 1 pound lean ground turkey (93% lean)
  • 1.5 cups broccoli florets, finely minced or pulsed in food processor
  • 0.5 cup sharp cheddar cheese, shredded
  • 0.25 cup almond flour
  • 1 large egg , lightly beaten
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon black pepper

Instructions

  • Preheat oven to 400°F (204°C) and line a large baking sheet with parchment paper.
  • Finely mince the broccoli florets until they reach a rice-like consistency, ensuring any excess moisture is blotted away with a paper towel.
  • In a large mixing bowl, combine the ground turkey, minced broccoli, shredded cheddar, almond flour, egg, garlic powder, onion powder, salt, and pepper.
  • Mix the ingredients by hand until just incorporated, being careful not to over-compress the meat.
  • Portion the mixture into approximately 20 uniform balls, roughly 1 inch in diameter, and place them on the prepared baking sheet.
  • Bake for 18 to 20 minutes, or until the internal temperature reaches 165°F (74°C) and the exterior is lightly browned.
  • Remove from the oven and allow the poppers to rest for 3 to 5 minutes to set before serving.
