Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Pierce sweet potatoes with a fork and rub with olive oil, salt, and pepper.
Bake potatoes for 45 to 50 minutes until tender throughout.
In a medium bowl, mix shredded chicken with marinara sauce and oregano.
Once potatoes are done, slice them open lengthwise and gently mash the interior with a fork.
Stuff each potato with an equal amount of the chicken and sauce mixture.
Top with mozzarella, parmesan, and breadcrumbs.
Bake for an additional 10 minutes or until the cheese is melted and breadcrumbs are golden.
Garnish with fresh chopped basil and serve.
