Healthy Chicken Parm Stuffed Sweet Potatoes

Ingredients

  • 4 medium sweet potatoes
  • 2 cups cooked chicken breast, shredded
  • 1.5 cups low -sodium marinara sauce
  • 1 cup shredded part-skim mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup whole wheat breadcrumbs
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • 2 tablespoons fresh basil, chopped
  • Salt and black pepper to taste

Instructions

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Pierce sweet potatoes with a fork and rub with olive oil, salt, and pepper.
  • Bake potatoes for 45 to 50 minutes until tender throughout.
  • In a medium bowl, mix shredded chicken with marinara sauce and oregano.
  • Once potatoes are done, slice them open lengthwise and gently mash the interior with a fork.
  • Stuff each potato with an equal amount of the chicken and sauce mixture.
  • Top with mozzarella, parmesan, and breadcrumbs.
  • Bake for an additional 10 minutes or until the cheese is melted and breadcrumbs are golden.
  • Garnish with fresh chopped basil and serve.
