Healthy Cinnamon Rolls with Greek Yogurt Dough

Ingredients

  • 1.5 cups whole wheat pastry flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon sea salt
  • 1 cup plain non-fat Greek yogurt
  • 2 tablespoons melted coconut oil
  • 0.25 cup coconut sugar
  • 1 tablespoon ground cinnamon
  • 0.25 cup plain Greek yogurt for icing
  • 1 tablespoon maple syrup
  • 0.5 teaspoon vanilla extract

Instructions

  • Preheat oven to 350 degrees Fahrenheit and grease an 8-inch circular baking pan.
  • In a large bowl, whisk together the flour, baking powder, and salt.
  • Add 1 cup of Greek yogurt to the dry ingredients and stir until a shaggy dough forms.
  • Transfer dough to a lightly floured surface and knead for 2-3 minutes until smooth and elastic.
  • Roll the dough into a rectangle approximately 12x8 inches and 0.25 inches thick.
  • Brush the surface with melted coconut oil, then sprinkle evenly with coconut sugar and cinnamon.
  • Roll the dough tightly from the long edge into a log and slice into 8 even rounds.
  • Arrange the rolls in the prepared pan and bake for 20 minutes until the edges are golden.
  • In a small bowl, whisk the icing ingredients (yogurt, maple syrup, vanilla) until smooth.
  • Spread the icing over the rolls while they are still warm and serve immediately.
