Healthy Cottage Cheese Lasagna

Ingredients

  • 9 whole wheat lasagna noodles
  • 1 lb lean ground turkey
  • 24 oz low -sodium marinara sauce
  • 16 oz low -fat cottage cheese
  • 1 large eg g
  • 2 cups fresh spinach, chopped
  • 2 cups shredded part-skim mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp sal t
  • 1/4 tsp black pepper

Instructions

  • Preheat oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • Brown the ground turkey in a large skillet over medium heat until fully cooked, then drain fat.
  • Stir the marinara sauce into the turkey and simmer for 5 minutes.
  • In a medium mixing bowl, whisk the egg and combine with cottage cheese, chopped spinach, half of the Parmesan, oregano, garlic powder, salt, and pepper.
  • Spread 1/2 cup of the meat sauce at the bottom of the prepared baking dish.
  • Place 3 noodles over the sauce, followed by half of the cottage cheese mixture, 1/3 of the remaining meat sauce, and 1/2 cup of mozzarella.
  • Repeat the layer: 3 noodles, remaining cottage cheese mixture, 1/3 of the meat sauce, and 1/2 cup of mozzarella.
  • Place the final 3 noodles on top, cover with the remaining meat sauce, remaining mozzarella, and remaining Parmesan.
  • Cover the dish tightly with foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 20 minutes until the cheese is browned and bubbly.
  • Allow the lasagna to rest for 10 minutes before slicing.
