Ingredients

  • 2 cups whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon fine sea salt
  • 1 cup natural creamy peanut butter (unsweetened)
  • 1/2 cup pure maple syrup
  • 2 large eggs , room temperature
  • 1 cup unsweetened almond milk
  • 1 teaspoon pure vanilla extract

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan or line with parchment paper.
  • In a large mixing bowl, whisk together the whole wheat flour, baking powder, and sea salt.
  • In a separate medium bowl, whisk the natural peanut butter, maple syrup, eggs, almond milk, and vanilla extract until the mixture is completely smooth.
  • Create a well in the center of the dry ingredients and pour in the wet mixture.
  • Fold the ingredients together using a spatula until just combined, ensuring no large pockets of dry flour remain.
  • Transfer the batter to the prepared loaf pan and smooth the surface with a spatula.
  • Bake for 45 to 55 minutes, or until a toothpick inserted into the center of the loaf emerges clean.
  • Cool the bread in the pan for 10 minutes before transferring to a wire rack to cool completely before slicing.
