Instructions

  • Heat olive oil in a non-stick skillet over medium-high heat and cook ground turkey until browned and internal temperature reaches 165°F.
  • Whisk eggs with salt and pepper, then add to the skillet with the turkey.
  • Scramble the mixture until eggs are set but still moist.
  • Fold in black beans and heat for 60 seconds.
  • Warm tortillas to improve pliability.
  • Distribute the egg and turkey mixture equally across the center of the three tortillas.
  • Top with cheese, avocado, and salsa.
  • Fold the left and right edges toward the center, then roll tightly from the bottom up to seal.
