High Protein Chocolate Banana Bread

Ingredients

  • 3 large ripe bananas, mashed
  • 2 large egg s
  • 1/2 cup non -fat Greek yogurt
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 1/2 cups oat flour
  • 2 scoops (60g) chocolate whey protein powder
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon sal t
  • 1/2 cup dark chocolate chips

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  • In a large bowl, mash the ripe bananas until smooth.
  • Whisk in the eggs, Greek yogurt, maple syrup, and vanilla extract until well combined.
  • In a separate bowl, sift together the oat flour, chocolate protein powder, cocoa powder, baking soda, and salt.
  • Gradually fold the dry ingredients into the wet ingredients until just combined; do not overmix.
  • Fold in 3/4 of the chocolate chips.
  • Pour the batter into the prepared loaf pan and sprinkle the remaining chocolate chips on top.
  • Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
