Ingredients

  • 1 cup clover honey
  • 2 tablespoons dried red chili flakes
  • 1 tablespoon apple cider vinegar

Instructions

  • Combine the clover honey and dried red chili flakes in a small stainless steel saucepan over medium-low heat.
  • Monitor the temperature closely until small bubbles begin to form around the perimeter of the pan, ensuring the honey does not reach a rolling boil to avoid caramelization.
  • Remove the saucepan from the heat source immediately once the infusion temperature is reached.
  • Allow the honey to steep undisturbed for 10 minutes to extract the heat from the chili flakes.
  • Stir in the apple cider vinegar to provide acidity and stabilize the viscosity.
  • Optional: Pass the warm mixture through a fine-mesh sieve into a sterilized glass jar if a clear consistency is desired.
  • Allow the mixture to reach ambient temperature before sealing and storing in a cool, dark environment.
