Homemade McGriddle Muffins

Ingredients

  • 2 cups all -purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp sal t
  • 1 cup whole milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg , lightly beaten
  • 1/2 cup pure maple syrup
  • 12 oz breakfast sausage, cooked and crumbled
  • 6 large eggs , scrambled and coarsely chopped
  • 1.5 cups shredded sharp cheddar cheese
  • 1/4 cup maple sugar nuggets

Instructions

  • Preheat oven to 375°F (190°C) and liberally grease a 12-cup standard muffin tin.
  • Whisk together flour, sugar, baking powder, and salt in a large mixing bowl.
  • In a medium bowl, whisk together milk, melted butter, 1 egg, and maple syrup.
  • Gently fold the wet ingredients into the dry ingredients until just moistened; do not overmix.
  • Fold the cooked sausage crumbles, chopped scrambled eggs, and 1 cup of the shredded cheddar into the batter.
  • Distribute the batter evenly among the 12 prepared muffin cups.
  • Sprinkle the remaining 1/2 cup of cheddar cheese and the maple sugar nuggets over the tops of the muffins.
  • Bake for 18 to 22 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  • Cool in the pan for 5 minutes before removing to serve warm.
