Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
On a lightly floured surface, stretch or roll the pizza dough into a rough rectangle approximately 1/2 inch thick.
Using a pizza cutter or sharp knife, cut the dough into 1-inch wide strips, then cut crosswise into 1-inch squares to create approximately 24 to 30 pieces.
Roll each dough piece into a small ball and place them on the prepared baking sheet, leaving 1 inch of space between each.
Bake for 12 to 15 minutes, or until the bites are puffed and the tops are a light golden brown.
While the bites bake, whisk together the melted butter, minced garlic, Italian seasoning, salt, and red pepper flakes in a large mixing bowl.
Remove the bites from the oven and immediately transfer the hot bread into the bowl with the garlic butter mixture.
Toss vigorously to coat every piece evenly, then add the Parmesan cheese and fresh parsley and toss once more.
Serve immediately while warm, optionally with a side of marinara sauce for dipping.
