Season chicken breasts on both sides with salt and pepper.
In a small saucepan over low heat, combine honey, red pepper flakes, and apple cider vinegar; simmer for 5 minutes to infuse then set aside.
Heat olive oil in a large skillet over medium-high heat.
Add chicken to the skillet and cook for 6 to 7 minutes per side or until the internal temperature reaches 165 degrees Fahrenheit.
Reduce heat to low and top each chicken breast with crumbled feta cheese.
Drizzle half of the hot honey mixture over the chicken and cover the skillet with a lid for 2 minutes until the cheese is softened.
Garnish with fresh parsley and serve with the remaining hot honey drizzled over the top.
