Indulgent Flourless Greek Yogurt Brownies

Ingredients

  • 1 cup plain full-fat Greek yogurt
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup pure maple syrup
  • 1 large eg g
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/2 cup semi -sweet chocolate chips

Instructions

  • Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  • In a large bowl, whisk the Greek yogurt, maple syrup, egg, and vanilla extract until the mixture is uniform.
  • Add the cocoa powder, baking soda, and salt, stirring until no dry clumps remain.
  • Fold in half of the chocolate chips into the batter.
  • Spread the batter evenly into the prepared baking pan and sprinkle the remaining chocolate chips on top.
  • Bake for 25 minutes or until the edges are set and a toothpick inserted into the center comes out with few moist crumbs.
  • Remove from oven and let the brownies cool completely in the pan for at least 30 minutes to allow the structure to firm up.
