  • 1 cup yellow cornmeal
  • 1 cup all -purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda

  • 1/2 cup unsalted butter, melted and cooled
  • 1/2 cup salted butter
  • 1/2 cup hone y

Instructions

  • Preheat waffle iron to a high heat setting and lightly coat with non-stick spray or butter.
  • In a large mixing bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt until uniform.
  • In a separate medium bowl, whisk the eggs into the buttermilk, then slowly incorporate the melted unsalted butter.
  • Pour the liquid mixture into the dry ingredients and fold gently with a spatula until just combined; small lumps are acceptable.
  • Spoon 2-tablespoon portions of batter onto the preheated waffle iron to create individual bite-sized rounds.
  • Close the iron and cook for 3 to 5 minutes, or until the exterior is golden brown and reaches maximum crispness.
  • While waffles cook, combine salted butter and honey in a small saucepan over low heat, stirring until the butter is melted and the syrup is smooth.
  • Remove waffle bites from the iron and serve immediately while hot, drizzled with the warm honey butter syrup.
