Keto Garlic Bread

Ingredients

  • 1.75 cups shredded mozzarella cheese
  • 2 tbsp cream cheese
  • 0.75 cup almond flour
  • 1 large egg , beaten
  • 1 tsp baking powder
  • 0.5 tsp garlic powder
  • 2 tbsp salted butter, melted
  • 2 cloves garlic , minced
  • 1 tbsp grated parmesan cheese
  • 1 tsp fresh parsley, finely chopped

Instructions

  • Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper or a silicone mat.
  • Place shredded mozzarella and cream cheese in a microwave-safe glass bowl. Microwave on high for 45 seconds, stir, and microwave for another 30-45 seconds until the cheese is completely melted and smooth.
  • Add the almond flour, baking powder, and garlic powder to the melted cheese. Stir quickly to incorporate.
  • Incorporate the beaten egg into the cheese and flour mixture. Knead the dough by hand or with a spatula until a uniform, slightly sticky ball forms.
  • Place the dough on the prepared baking sheet. Place a second sheet of parchment paper over the dough and roll it out into a rectangle approximately 1/4 inch thick.
  • Remove the top layer of parchment and bake the dough for 8 to 10 minutes until it begins to turn light golden brown.
  • While the dough bakes, whisk together the melted butter, minced garlic, and parsley in a small bowl.
  • Remove the bread from the oven. Brush the garlic butter mixture evenly across the surface and sprinkle with grated parmesan cheese.
  • Return the bread to the oven and bake for an additional 5 minutes, or broil on high for 1-2 minutes until the edges are crispy and the cheese is bubbly.
  • Allow the bread to cool for 2 minutes before slicing into 8 equal pieces with a pizza cutter.
