Ingredients

  • 1 lb 85% lean ground beef
  • 1 tablespoon olive oil
  • 1/2 cup yellow onion, finely diced
  • 2 cloves garlic , minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 cup wate r
  • 8 large leaves of butter lettuce or romaine hearts
  • 1/2 cup shredded cheddar cheese
  • 1 medium avocado , diced
  • 1/4 cup full -fat sour cream
  • 1/4 cup sugar -free salsa

Instructions

  • Heat olive oil in a large skillet over medium-high heat.
  • Add the diced onion and sauté for 3 minutes until translucent.
  • Add the minced garlic and ground beef to the skillet, breaking the meat apart with a spatula.
  • Cook the beef until fully browned, approximately 7 minutes, and drain any excess rendered fat.
  • Stir in the chili powder, cumin, paprika, oregano, salt, pepper, and water.
  • Reduce heat to medium-low and simmer for 5 minutes until the liquid has reduced and the meat is well-coated.
  • Wash and thoroughly dry the lettuce leaves to maintain crispness.
  • Portion the seasoned beef into each lettuce leaf.
  • Garnish with shredded cheese, diced avocado, sour cream, and salsa.
