Ingredients

  • 1 cup low -fat cottage cheese
  • 2 cups rolled oats, ground into flour
  • 2 scoops vanilla whey protein powder
  • 2 tablespoons hone y
  • 1 tablespoon lemon zest, freshly grated
  • 1 tablespoon lemon juice
  • 1/2 cup dried blueberries
  • 1/2 teaspoon vanilla extract

Instructions

  • Place cottage cheese, honey, lemon juice, and vanilla extract in a high-speed blender or food processor and blend until completely smooth.
  • In a large mixing bowl, combine the ground oat flour, protein powder, and lemon zest.
  • Pour the blended cottage cheese mixture into the dry ingredients and stir until a thick dough forms.
  • Gently fold in the dried blueberries until evenly distributed.
  • Place the dough in the refrigerator for 30 minutes to firm up for easier handling.
  • Using a tablespoon or small scoop, portion the dough and roll into 12 uniform balls.
  • Store in an airtight container in the refrigerator for up to 5 days.
