Ingredients

  • 1.5 cups old -fashioned rolled oats
  • 0.5 cup creamy cashew butter
  • 0.25 cup hone y
  • 2 tablespoons poppy seeds
  • 1 tablespoon fresh lemon zest
  • 1 tablespoon fresh lemon juice
  • 0.5 teaspoon vanilla extract
  • 0.125 teaspoon fine sea salt

Instructions

  • In a large mixing bowl, stir together the rolled oats, poppy seeds, lemon zest, and sea salt.
  • Add the cashew butter, honey, lemon juice, and vanilla extract to the dry ingredients.
  • Mix thoroughly using a stiff spatula until the dough is cohesive and the oats are evenly coated.
  • Scoop approximately 1 tablespoon of the mixture at a time and roll between palms to form 12 uniform spheres.
  • Place the energy bites on a parchment-lined tray.
  • Refrigerate for at least 30 minutes to allow the oats to hydrate and the bites to firm up.
