Low-Carb Bacon Cheeseburger Casserole

Ingredients

  • 1.5 lbs ground beef (80/20)
  • 6 slices bacon , chopped
  • 0.5 cup diced yellow onion
  • 2 cloves garlic , minced
  • 4 large egg s
  • 0.5 cup heavy cream
  • 0.25 cup sugar -free ketchup
  • 1 tablespoon yellow mustard
  • 1 teaspoon sal t
  • 0.5 teaspoon black pepper
  • 2 cups shredded cheddar cheese

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • Cook chopped bacon in a large skillet over medium-high heat until crispy; remove bacon and set aside.
  • Add ground beef and onion to the same skillet and cook until meat is browned; drain excess fat.
  • Stir in minced garlic and cook for 60 seconds.
  • Spread the beef and onion mixture into the prepared baking dish.
  • Whisk together eggs, heavy cream, ketchup, mustard, salt, and pepper in a bowl.
  • Sprinkle half of the cheese and half of the bacon over the beef.
  • Pour the egg mixture over the beef and top with the remaining cheese and bacon.
  • Bake for 30 minutes or until the egg mixture is set and the cheese is melted.
