Magic Protein Peanut Butter Frosting

Ingredients

  • 1 cup non -fat plain Greek yogurt, strained
  • 30 grams vanilla or peanut butter whey protein isolate
  • 2 tablespoons powdered peanut butter
  • 1 tablespoon natural creamy peanut butter
  • 1 tablespoon monk fruit sweetener
  • 0.25 teaspoon vanilla extract
  • 1 pinch sea salt

Instructions

  • Place the strained Greek yogurt in a chilled mixing bowl.
  • Sift the protein powder and powdered peanut butter into the bowl to prevent clumping.
  • Add the natural peanut butter, monk fruit sweetener, vanilla extract, and sea salt.
  • Whisk the mixture vigorously by hand or with an electric mixer on medium speed for 2 minutes until the texture is smooth and aerated.
  • Transfer the frosting to a piping bag or airtight container.
  • Refrigerate for a minimum of 20 minutes to allow the protein to fully hydrate and the frosting to set to a firm consistency.
