Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together olive oil, minced garlic, paprika, oregano, salt, pepper, and lemon juice.
Add shrimp to the bowl and toss to coat thoroughly. Let marinate for 10 minutes.
Thread 4 to 5 shrimp onto each skewer, piercing through both the tail and the thickest part of the body to secure.
Arrange skewers on the prepared baking sheet in a single layer.
Bake for 6 to 8 minutes, or until the shrimp are opaque and pink, rotating the skewers halfway through the cooking time.
Remove from oven and serve immediately with fresh lemon wedges.
