Oven Baked Shrimp Skewers

Ingredients

  • 1 lb large shrimp (16-20 count), peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic , minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 8 wooden or metal skewers

Instructions

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together olive oil, minced garlic, paprika, oregano, salt, pepper, and lemon juice.
  • Add shrimp to the bowl and toss to coat thoroughly. Let marinate for 10 minutes.
  • Thread 4 to 5 shrimp onto each skewer, piercing through both the tail and the thickest part of the body to secure.
  • Arrange skewers on the prepared baking sheet in a single layer.
  • Bake for 6 to 8 minutes, or until the shrimp are opaque and pink, rotating the skewers halfway through the cooking time.
  • Remove from oven and serve immediately with fresh lemon wedges.
