Ingredients

  • 1 cup oat flour
  • 2 scoops vanilla whey protein powder
  • 1/2 cup natural creamy peanut butter
  • 1/4 cup sugar -free maple syrup
  • 1/4 cup unsweetened almond milk
  • 1 large eg g
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp sal t
  • 2 tbsp mini semi-sweet chocolate chips

Instructions

  • Preheat oven to 350 degrees Fahrenheit and line an 8x8 inch baking pan with parchment paper.
  • In a large mixing bowl, combine the egg, peanut butter, sugar-free syrup, almond milk, and vanilla extract.
  • Whisk the wet ingredients until the mixture is smooth and emulsified.
  • Add the oat flour, protein powder, baking powder, and salt to the bowl.
  • Stir with a spatula until a thick dough forms, then fold in the chocolate chips.
  • Transfer the batter to the prepared pan and smooth the top with a wet spatula.
  • Bake for 18 to 22 minutes or until a toothpick inserted into the center comes out clean.
  • Let the blondies cool completely in the pan to allow the structure to set before slicing into 9 squares.
