Pizza Cottage Cheese Bake

Ingredients

  • 2 cups low -fat cottage cheese
  • 2 large eggs , beaten
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 cup marinara sauce, low sugar
  • 1.5 cups shredded part-skim mozzarella cheese
  • 1/2 cup mini pepperoni slices
  • 1/4 cup diced green bell peppers

Instructions

  • Preheat the oven to 400°F (200°C) and lightly grease an 8x8-inch baking dish.
  • In a mixing bowl, combine the cottage cheese, beaten eggs, Parmesan cheese, oregano, and garlic powder until uniform.
  • Spread the cottage cheese mixture into the bottom of the prepared baking dish in an even layer.
  • Bake the base for 15 to 20 minutes until the mixture is set and the edges begin to turn golden brown.
  • Remove from the oven and carefully spread the marinara sauce over the cottage cheese layer.
  • Sprinkle the shredded mozzarella cheese over the sauce and top with pepperoni slices and diced bell peppers.
  • Return the dish to the oven and bake for an additional 10 minutes, or until the mozzarella is melted and bubbling.
  • Allow the bake to rest for 5 minutes to set before slicing and serving.
