Protein Chocolate Covered Strawberry Bark

Ingredients

  • 2 cups Greek yogurt
  • 2 scoops (60g) vanilla protein powder
  • 1 tablespoon hone y
  • 1 cup fresh strawberries, hulled and thinly sliced
  • 1/2 cup dark chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • Line a baking sheet with parchment paper.
  • In a medium mixing bowl, whisk together the Greek yogurt, protein powder, and honey until smooth.
  • Spread the yogurt mixture onto the prepared baking sheet in an even layer about 1/4 inch thick.
  • Arrange the sliced strawberries in a single layer over the yogurt base, pressing them down slightly.
  • In a microwave-safe bowl, combine dark chocolate chips and coconut oil; heat in 30-second intervals until melted.
  • Drizzle the melted chocolate over the strawberries and yogurt layer.
  • Freeze the tray for at least 3 hours or until completely solid.
  • Break into shards and serve immediately or store in the freezer.
