Ingredients

  • 8 slices brioche or challah bread, 1-inch thick
  • 3 large egg s
  • 1/2 cup canned pumpkin puree
  • 1 cup whole milk
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon kosher salt
  • 2 tablespoons unsalted butter

Instructions

  • In a wide, shallow bowl, whisk together the eggs, pumpkin puree, milk, maple syrup, vanilla extract, pumpkin pie spice, and salt until smooth.
  • Heat a large non-stick skillet or griddle over medium heat and melt 1 tablespoon of butter.
  • Dip each slice of bread into the pumpkin mixture, allowing it to soak for approximately 15 seconds per side.
  • Transfer the soaked bread to the skillet and cook for 3 to 4 minutes per side until golden brown and the center is cooked through.
  • Repeat the process with the remaining bread slices, adding more butter to the skillet as necessary.
  • Serve immediately with additional maple syrup or desired toppings.
