Rainbow Chip Cookies

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large egg s
  • 2 teaspoons vanilla extract
  • 3 cups all -purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon sal t
  • 1.5 cups rainbow baking chips

Instructions

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy, approximately 3 minutes.
  • Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  • In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet ingredients on low speed until a cohesive dough forms.
  • Gently fold in the rainbow chips using a spatula until evenly distributed throughout the dough.
  • Scoop rounded tablespoons of dough and place them 2 inches apart on the prepared baking sheets.
  • Bake for 10 to 12 minutes, or until the edges are set and just beginning to turn a light golden brown.
  • Allow the cookies to cool on the baking sheet for at least 5 minutes to set before transferring them to a wire rack to cool completely.
