Ingredients

  • 2 slices sourdough bread
  • 1/2 cup low -fat cottage cheese
  • 1/4 cup cucumber , thinly sliced
  • 4 cherry tomatoes , halved
  • 1 teaspoon extra virgin olive oil
  • 1/2 teaspoon everything bagel seasoning
  • 1 teaspoon fresh dill, chopped
  • 1 pinch red pepper flakes

Instructions

  • Toast the sourdough slices until golden brown and crisp.
  • Spread 1/4 cup of cottage cheese evenly over each slice of toast.
  • Arrange the sliced cucumber and halved cherry tomatoes on top of the cottage cheese layer.
  • Drizzle the extra virgin olive oil over the assembled toasts.
  • Garnish with everything bagel seasoning, fresh dill, and red pepper flakes.
