  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 2 tablespoons unsalted butter
  • 1 tablespoon fresh Italian parsley, finely chopped

Instructions

  • Combine the pork cubes, minced garlic, soy sauce, Worcestershire sauce, olive oil, smoked paprika, salt, and pepper in a non-reactive mixing bowl.
  • Toss the ingredients thoroughly to ensure the pork is evenly coated in the marinade.
  • Allow the pork to marinate at room temperature for 30 minutes to facilitate flavor penetration.
  • Preheat a heavy-bottomed cast-iron skillet over medium-high heat until the surface reaches approximately 400 degrees Fahrenheit.
  • Place the pork cubes into the skillet in a single layer, ensuring adequate spacing to prevent steaming; work in batches if necessary.
  • Sear the pork undisturbed for 3 to 4 minutes to develop a caramelized exterior crust.
  • Flip the cubes using tongs and continue cooking for another 3 to 4 minutes until the internal temperature reaches a minimum of 145 degrees Fahrenheit.
  • Add the unsalted butter to the skillet during the final minute of cooking, basting the pork as the butter foams.
  • Remove the skillet from the heat source and garnish the pork bites with chopped parsley before service.
