Ingredients

  • 1 lb smoked sausage, sliced into 1/2-inch rounds
  • 2 large sweet potatoes, peeled and cubed into 1-inch pieces
  • 2 tablespoons olive oil
  • 1/4 cup hone y
  • 3 cloves garlic , minced
  • 1 tablespoon soy sauce
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  • Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  • In a large bowl, toss the cubed sweet potatoes with olive oil, salt, and pepper until evenly coated.
  • Spread the sweet potatoes onto the prepared baking sheet in a single layer and roast for 15 minutes.
  • While potatoes roast, whisk together honey, minced garlic, soy sauce, and red pepper flakes in a small bowl.
  • Remove the baking sheet from the oven and add the sliced sausage to the potatoes.
  • Drizzle the honey garlic sauce over the sausage and potatoes, tossing with a spatula to ensure all pieces are glazed.
  • Return the baking sheet to the oven and roast for an additional 10 to 12 minutes until the sweet potatoes are tender and the sauce has thickened.
  • Garnish with fresh parsley before serving.
